Noel W. Solomons lebt und arbeitet seit mehr als 40 Jahren in Guatemala. Geboren und aufgewachsen ist er in Massachusetts, USA. Schon als kleines Kind wurde er zum Amateur-Naturforscher und nutzte mehrere Sommer-Camp-Aufenthalte als Gelegenheit die Natur zu studieren und von ihr zu lernen. Dies diente als Einstieg in seine wissenschaftliche Karriere. Als junger Erwachsener nahm er an der Bürgerrechts- und Anti-Kriegsbewegung teil, wurde jedoch bald von den persistierenden sozialen Missständen in der US-amerikanischen Gesellschaft desillusioniert. Sein Medizin-Studium absolvierte er am Harvard College und der Harvard Medical School. Seine Auslandsaufenthalte während seines Medizinstudiums führten ihn dabei nach Peru und Kolumbien und ließen den Entschluss reifen, sich langfristig außerhalb seines Geburtslandes zu engagieren. Seine klinischen Erfahrungen im Bereich der Inneren Medizin und Infektionskrankheiten sammelte er am Krankenhaus der University of Pennsylvania. Später spezialisierte er sich dann im Bereich Gastroenterologie und klinische Ernährung an der University of Chicago. 1974 siedelte er nach Guatemala über und arbeitete dort als wissenschaftlicher Mitarbeiter am Institut für Ernährung in Mittelamerika und Panama. Später pendelte er dann für 8 Jahre von dort zu seiner Fakultätsanstellung am Institut für Ernährung und Lebensmitteltechnologie des Massachusetts Institute of Technology. 1985 trat er ein Vollzeit-Engagement in Guatemala als Mitbegründer des Center for Studies of Sensory Impairment, Aging and Metabolism (CeSSIAM) an, wo er seitdem als wissenschaftlicher Direktor fungiert. Über 40 Abschlussarbeiten von mittelamerikanischen Studenten wurden bisher dort betreut, ebenso wie eine gleichgroße Anzahl von Forschungsprojekten internationaler Master-Studenten aus Europa, Nord- und Südamerika. Dr. Solomons hat bisher 12 Doktoranden aus den USA, Kanada, Deutschland, Spanien und den Niederlanden bei CeSSIAM betreut.

Medline (Medical Literature Analysis and Retrieval System Online) listet 302 Artikel des Autors NW Solomons. Zusätzlich hat Dr. Solomons zwei Bücher editiert und über 100 Artikel, Reviews, Editorials und Kommentare, die nicht bei Medline geführt werden, sowie 50 Buchartikel zu verantworten.  Seine Arbeit widmet sich seinen wissenschaftlichen und akademischen Interessen mit Schwerpunkten unter anderem bei der klinischen Ernährung, dem menschlichen Wachstum und der Körperzusammensetzung, der Laktose-Malabsorption, der Nahrungsmittelzufuhr, dem Ernährungsstatus, der intestinalen Resorption und der Lebensmittelanreicherung in Bezug auf verschiedene Mikronährstoffe (Vitamine, Spurenelemente und essentielle Fettsäuren), der Beikost, der Ernährung im Alter und bei chronischen Erkrankungen sowie den Wechselbeziehungen zwischen Mangelernährung und Entzündung.

Unter den Auszeichnungen, die Dr. Solomons erhalten hat, sind der International Nutrition Prize der International Union of Nutritional Sciences und der Kellogg Prize der Society for International Nutrition Research. Noel Solomons ist Mitglied der American Society of Nutrition, der guatemaltekischen Academia de Ciencias Medicas, Físicas y Naturales und der spanischen Academia de Nutrición y Tecnología de los Alimentos. 2010 wurde ihm in Guatemala die Nationale Medaille für Wissenschaft und Technologie verliehen.

Dr. Solomons war Gastdozent an Hochschulen in Mexiko, Peru, Brasilien, Indonesien und Spanien. Zurzeit erfüllt er Lehraufträge an der Boston University School of Public Health sowie an der Friedman School of Nutrition Science and Policy und dem Institut für Community Medicine and Public Health an der Tufts University. Er ist Mitbegründer der Hildegard-Grunow-Stiftung und der Essential Nutrient Foundation in Singapur. Für die Nevin Scrimshaw International Nutrition Foundation in Boston fungiert Dr. Solomons als Koordinator für Mittelamerika und ist Mitherausgeber des Stiftungs-Journals Food and Nutrition Bulletin. Darüber hinaus ist er bei 10 weiteren wissenschaftlichen Journals Teil der Redaktionsleitung.
